Soft Glazed Sugar Cookies / Galletas blandas con glaseado

I’ve been craving sugar cookies lately, so I wanted to try this recipe that I found. The cookies I made ultimately came out very different from hers (and the ones that I wanted…), but ended up being very similar in texture to a recipe that my family loves and calls “dope cookies” because they’re so addictive. I took these cookies into my internship, and people devoured them very quickly and are requesting even more!

If you want cookies more like those in the source recipe, I think you would have to add much more flour than I used; the person who made the recipe must have a very heavy hand when measuring out the flour, because my dough was much too wet to roll out.

Últimamente he tenido ganas de galletas de azúcar, así que quería probar esta receta que encontré. Las galletas (de la receta) que yo hice eran diferentes de las de ellas (y las que quería…), pero eran muy parecidos a las galletas de una receta familiar. Llevé las galletas a mi trabajo, donde mis colegas se las comió, ¡y tres días después todavía me están pidiendo más!

Si quieres galletas como las galletas en la receta original, creo que tendrías que usar mucho más harina que yo usé. La persona que escribió la receta debe de haber apisonado la harina en las tazas, porque mi masa era demasiado mojada, y no pude estirarla.

First, there are a few adjustments I made to remove the eggs and dairy (do these before anything else!):
1) Use margarine instead of butter. Easy.
3) Use this recipe to make the coconut sour cream (use a 15 oz. can of full fat coconut milk—approx. 440 mL).
2) Use this recipe to replace the eggs (make only this amount to replace two eggs):
1 Tbsp (12g) tapioca or corn starch
1 Tbsp (10g) potato starch
1/4 tsp (1g) baking powder
Add a scant 1/2 cup (~110 mL) water and 2 tsp (10 mL) oil. Whisk until thoroughly combined and somewhat frothy.

 
Let’s get down to business!


Fluffy Sugar Cookies
(This makes A TON of cookies)

Ingredients:
1 cup (230g) margarine (or butter)
2 cups (400g) white sugar
2 “eggs” (or actual eggs)
1 Tbsp (15 mL) vanilla extract
1 cup (240 mL) coconut sour cream (or regular sour cream)
1 tsp (8g) salt
2 tsp (16g) baking soda
27 oz. (765g) all-purpose flour ---- I prefer to measure by weight because it is much more accurate and consistent than using cups. My way of scooping 5 ½ cups of flour was obviously very different from the way that the recipe’s author scoops flour.

Directions:
In mixer, cream margarine and sugar, and then add “eggs” and vanilla. Add coconut sour cream. Combine salt, soda, and flour, and add to mixture. 

It might look weird after all the wet ingredients are mixed, but that's okay! / Puede parecer un poco raro cuando todos los ingredientes mojado son mezclados, ¡pero está bien!

Scoop out onto a baking sheet and bake at 375ºF (190ºC) for 7-9 minutes (7 for smaller cookies, up to 9 for very large cookies). They will be very pale when they are finished. Don’t let them brown, or they won’t be soft and fluffy.

Optional: Add lemon or orange zest to the wet ingredients.

To finish these, I let them cool completely and then glazed them. I never measure the ingredients for glaze, so you might want to Google a glaze recipe if you like exact numbers. For the lemon glaze, I just tossed together some lemon juice, a tiny bit of lemon extract, powdered (confectioner’s) sugar, and some lemon zest. For the orange glaze, I used orange juice, orange zest (lots, as you can see in the picture below), and powdered sugar.

Primero, cambié algunas instrucciones para remover los huevos y productos lácteos (¡haz estos antes de todo!):
            1) Usé margarina en vez mantequilla.
            2) Usé esta receta para hacer la crema de coco agria:
                        - 1 lata (15 oz. : aprox. 440 mL) leche de coco con toda su grasa (dejada en el                         refrigerador durante 8 a 12 horas)
                        - 1 cucharada (15 mL) zumo de limón o vinagre de sidra de manzana
                        - 1/8 a ¼ (1g a 2g) cucharadita sal
                       
                        Pon la lata de leche de coco en la nevera durante 8 horas (por lo menos). La
                        crema se va a separar de la leche. Abre la lata y pon la crema en un tazón. 
                        Añade el zumo y la sal. Bate la mezcla bien.
 

            3) Usé esta receta para reemplazar los huevos (haz sólo esta cantidad para reemplazar dos             huevos):
                        - 1 cucharada (12g) maicena
                        - 1 cucharada (10g) almidón de patata
                        - ¼ (1g) cucharadita levadura en polvo
                        - ½ taza (escasa) agua (~110 mL)
                        - 2 cucharaditas (10 mL) aceite

                        Bate la mezcla hasta que es un poco espumosa.
           

¡Y ahora estamos listos!

Galletas blandas de azúcar
(Esta receta hace MUCHAS galletas)

Ingredientes:
1 taza (230g) margarina (o mantequilla)
2 tazas (400g) azúcar blanca
2 “huevos” (arriba. O puedes usar huevos verdaderos)
1 cucharada (15 mL) extracto de vainilla
1 taza (240 mL) crema de coco agria (o crema agria verdadera)
1 cucharadita (8g) sal
2 cucharaditas (16) bicarbonato de sosa
27 onzas (765g) harina

Instrucciones:
Bate la margarina y azúcar, y luego añade los “huevos” y la vainilla. Añade la crema de coco agria.

Mezcla la harina, la sal, y el bicarbonato de sosa, y añade a la mezcla mojada. No la mezcles demasiado o las galletas van a ser correosas.

Hornea las galletas a 375ºF (190ºC) durante 7-9 minutos (7 para galletas pequeñas, hasta 9 para galletas grandes). Cuando han terminado, aún van a ser muy pálidas. No permita que se pongan marrón, o no van a ser blandas.

Opcional: Añade ralladura de limón o naranja a los ingredientes mojados.

Para completar las galletas, las glaseé. Nunca mido los ingredientes, así que te gustaría tener los números exactos, recomiendo que los busques en Google. Para el glaseado de limón, mezclé zumo de limón, un poquitito de extracto de limón, azúcar en polvo, y ralladura de limón. Para el glaseado de naranja, usé zumo de naranja, ralladura de naranja (un montón, como puedes ver en la foto), y azúcar en polvo.

Pound cake / Ponqué de vainilla (vegan / vegano)


I promised cake, and I have delivered! This isn’t the cake I had in mind (that will make an appearance soon), but I found this recipe, and it looked interesting. I haven’t had my mom’s pound cake in years because of all the eggs and dairy it calls for, so I wanted to see if this would simulate it. To make a long story short…no. It didn’t. But it was still tasty!

Te prometí pastel, ¡y aquí está! No es el pastel de que estaba pensando (y lo cual voy a hacer pronto), pero encontré esta receta que me interesó. Hace años que no como el ponqué riquísimo que hace mi mamá, así que quería reproducirlo. En breve, no he tenido éxito en duplicarlo, PERO todavía me gusta este pastel.

Mini Vanilla Pound Cakes

Makes 2 loaves, 5 ¾ x 3-inch (~14 ½ cm x 7 ½ cm) pans

Ingredients:
Wet:
1/4 cup + 2 Tbsp (6 Tbs in total: 85 mL) almond (or soy) milk
2 Tbsp (20g) flaxmeal (flax seed meal)
1/2 (4g) tsp salt
1.5 Tbsp (1 Tbsp + 1.5 tsp: 25 mL) vanilla extract
2 tsp (10 mL) apple cider vinegar
1/2 cup + 2 Tbsp (10 Tbs in total: 125g) sugar
1 Tbsp (15 mL) Oil

Roux:
3 Tbsp (45 mL) oil
6 Tbsp flour (1/4 cup + 2 Tbsp: 45g)
1/2 cup (120 mL) almond milk

Dry:
3/4 cup (90g) AP flour
2 Tbsp (15g) cornstarch
3/4 tsp (4g) baking powder
1/4 tsp (2g) baking soda


Preparation:
Wet: In a bowl, mix the flaxmeal and almond milk, let sit for a minute. Then add everything else under wet. Mix until well combined.

Dry: In another bowl, add everything under dry, whisk and keep ready.


In a small pan, heat 3 Tbsp oil on medium heat. Add the flour and cook until aromatic. 2 minutes.

Take the pan off heat and add about a Tbsp of the almond milk. Mix in and add the rest of the almond milk. Mix and put back on low-medium heat. Mix until a thick roux is formed and the it leaves the pan. 1 minute.

Let the roux cool for a minute then mix into the wet mixture. Mix until well combined.
Combine the wet and dry. Drop batter onto well-greased and -floured mini pans. Even it out using a spatula or oiled hands. The batter will be very thick like a spongy soft dough.

Bake in preheated 350  *F (175  *C) oven for 30-35 minutes.*



Cool completely before slicing.

*Check at 30 minutes for doneness. I cooked them for 40 minutes or so, and they were still not quite done. I think now that my pans may have been a little smaller than the recipe called for.

Ponqués miniaturas de vainilla (veganas)

2 hogazas, molde para hornear 5 ¾ pulgadadas x 3 pulgadas (~14 ½ cm x 7 ½ cm)

Ingredientes:
Mojados:
¼ taza + 2 cucharadas (6 cucharadas en total: 85 mL) de leche de almendras (o soja)
2 cucharadas (20g) de semillas de lino molidas
½ cucharaditas (4g) de sal
1 ½ cucharadas (1 cucharada + 1 ½ cucharaditas: 25 mL) de extracto de vainilla
2 cucharaditas (10 mL) de vinagre de sidra de manzana
½ taza + 2 cucharadas (10 cucharadas en total: 125g) de azúcar
1 cucharada (15 mL) de aceite

Para el roux:
3 cucharadas (45 mL) de aceite
6 cucharadas (45g) de harina
½ taza (120 mL) de leche de almendra o soja

Secos:
¾ taza (90g) harina
2 cucharadas (15g) de harina de maiz
¾ cucharadita (4g) de baking powder
¼ cucharadita (2g) de baking soda

Instrucciones:
Ingredientes mojados:
En un tazón pequeño, mezcla las semillas de lino molidas y la leche de almendras (o soja), y déjala durante un minuto. Luego añade el resto de los ingredientes mojados y mézclalas bien.

Ingredientes secas: En otro tazón, mezcla todos los ingredientes secos.

In un sartén pequeño, calienta 3 cucharadas de aceite a fuego medio. Añada la harina y cocina la mezcla durante 2 minutos.

Remueve el sartén del fuego y añade una cucharada de la leche de almendras. Mézclala bien y luego añade el resto de la leche de almendras. Mézclala bien y cocínala a fuego medio-lento. Mezcla todo durante un minuto. La masa será muy espesa. 


Remueve el roux del fuego y déjalo refrescar durante un minuto. Luego mézclalo bien con los ingredientes mojados. Combina esta mezcla con los ingredientes secos. Divida la masa entre dos moldes para hornear bien engrasados. La masa debe de ser bastante espesa.

Hornea los ponqués a 350  *F (175  *C) durante 30-35 minutos.*


*Los horneé durante 40 minutos o más, y aún no fueron completamente horneados. Pruébalos con un palillo para averiguar si están listos.
