Crepes!



Crepes have a bit of a reputation for being hard to make, but once you get the hang of them, they’re not that bad. My awesome flatmate when I was studying in Spain a few years ago was French, and she made crepes one day—she just tossed some ingredients in a bowl (no measuring!), gave it a stir (okay, a lot of stirs), and cooked ‘em up! She then showed me her way of eating them (a traditional way): just a sprinkle of sugar. Nothing heavy, nothing fussy, just really really tasty. A little lemon juice with the sugar is also delicious, so I figured the sweet and tart lemon curd from my last post would be perfect for crepes. If you’ve never made crepes, you might want to double the recipe; I lost quite a few crepes while trying to figure out how to flip them.
This recipe, you’ll see, doesn’t have eggs, so it’s not a traditional crepe. However, it turns out just fine, and if you discover that you’re out of eggs, you need not give up crepe aspirations!

Los crepes tienen una reputación de ser difíciles de hacer, pero con practica no los son. Mi maravillosa compañera de piso cuando estudié en España hace unos años era francesa, y un día hizo crepes—tiró unos ingredientes en un tazón (¡sin medirlos!), los mezcló bien, ¡y fueron riquísimos! Luego me enseñó su manera de comerlos (una manera tradicional): una pizca de azúcar. Ligero, tierno, delicioso. Un poco de zumo de limón con el azúcar también está muy bien, así que pensaba que la crema de limón dulce y ácida de mi última entrada estaría muy bien con los crepes. Si nunca has hecho crepes, es posible que quieras doblar la receta; perdí unos cuantos crepes antes de entender como voltearlos.
Esta receta, vas a ver, no tiene huevos, así que no es un crepe tradicional. Sin embargo, el resultado es muy parecido, y si descubres que no hay huevos en casa, ¡no hay que abandonar sus sueños de crepes!

Crepes
(From this receipe)

Ingredients:
1/2 cup (120 mL) soy milk (or cow’s milk)
1/2 cup (120 mL) water
1/4 cup (60 mL) oil*
1 Tbs (10g) sugar
2 Tbs (30 mL) maple syrup or honey
1 cup (120g) flour
¼ tsp (2g) salt

*use a neutral-flavored oil for sweet crepes, but maybe try out olive oil for savory crepes!


Directions:
In a large mixing bowl, blend milk, water, oil, sugar, syrup/honey, flour, and salt. Cover and chill the mixture for 2 hours (why?)

Lightly grease a 5 to 6 inch skillet with some oil. Heat the skillet until hot.* Pour approximately 3 tablespoons batter into the skillet. Swirl to make the batter cover the skillet's bottom. Cook until golden (1-2 minutes), flip** and cook on opposite side.

*Tip 1: In order for the crepe to cook quickly, which will prevent it from becoming tough and chewy, you want the pan to be quite hot. I like to heat the empty pan on medium heat for about five minutes before starting. Drops of water in the pan should “dance” a bit, but shouldn’t immediately evaporate, or your crepes will burn.

**Tip 2: To flip the crepes, use your fingers! Use a flexible spatula to lift the edges of the crepe for a few seconds so you don’t burn your fingers. When it’s ready to flip, hold the edge, and then tilt the pan toward your hand while gently pulling down. Flop it back in the pan, and the hardest part is done!

Crepes

Ingredientes:
½ taza (120 mL) de leche de soja (o de vaca)
½ taza (120 mL) de agua
¼ taza (60 mL) de aceite*
1 cucharada (10g) de azúcar
2 cucharadas (30 mL) de miel o jarabe de arce
1 taza (120g) de harina
¼ cucharadita (2g) de sal

*usa un aceite de sabor neutral para los crepes dulces, pero quizás aceite de olive estaría bien para los crepes salados


Instrucciones:
En un tazón, mezcla bien todos los ingredientes. Cubre la mezcla y déjala en la nevera durante dos horas.

Ligeramente engrasa una sartén (~12-15 cm) con aceite.* Calienta la sartén, y pon ~3 cucharadas (45 mL) de la masa en la sartén. Mueve la sartén para que la masa cubra todo el fondo de la sartén. Cocina la masa hasta que la parte inferior es dorada (~1-2 minutos), voltea el crepe y cocínalo.

Much better! / ¡Mucho mejor!


Consejo 1: Para evitar que los crepes se vuelvan correosos, hay que cocinarlos rápidamente en una sartén bastante caliente. Caliento la sartén vacía a fuego medio durante unos cinco minutos. Gotas de agua debería “danzar” y no evaporarse inmediatamente (o los crepes se van a quemar),

Consejo 2: Para voltear los crepes, ¡usa los dedos! Utiliza una espátula flexible para levantar los bordes del crepe durante unos segundos para que pueda entibiar (¿se dice?) un poco. Cuando está listo, coge el borde e inclina la sartén mientras suavemente halas el crepe hacia abajo. Colocar el crepe en la sartén de nuevo, ¡y has completado la parte más difícil!

Vegan Lemon Curd / Crema de limón vegana



It’s been longer than usual since I last posted because, quite honestly, I couldn’t bring myself to write up the last recipe. I made it, took (lousy) pictures, and converted the measurements, but at the end of the day, I didn’t like the dish. I finally let it go. Why would I recommend a recipe to you that I didn’t like? Anyway, today’s recipe wasn’t too difficult, and it will lead to TWO more posts (crepe cake! Macarons!). I love lemon in savory dishes and sweet things, so I am very excited to have a lot of lemon curd to experiment with.

Ha pasado una semana sin una entrada nueva porque, francamente, no pude escribir la última receta que hice. La hice, saqué fotos (mediocres), y aun convertí las medidas, pero al final, no me gustó el resultado. Dejé la receta. ¿Por qué te recomendaría una receta que no me gustó? De todos modos, esta receta no es muy difícil, y la usaré en DOS entradas más (¡pastel de crepes! ¡Macarons!). Me encanta el limón en platos salados y dulces, así que me alegra mucho tener tanta crema de limón.

Vegan Lemon Curd


Ingredients
1 ¼ cup (300 mL) lemon juice
1 ¼ cup (250g) sugar
2 Tbsp fresh lemon zest (optional)
¼ tsp (2g) salt
2 Tbsp (30 mL) coconut milk
3 Tbsp (35g) corn starch dissolved in 3 Tbsp cold water
2 Tbsp (30g) margarine


Directions:

In a small saucepan over medium heat, combine the lemon juice, sugar, lemon zest, and salt, stirring well to dissolve the sugar.

After the sugar is dissolved, add the corn starch mixture and the coconut milk, stirring well to combine.

Stirring constantly, cook until the mixture begins to thicken and the first few bubbles appear on the surface, about 8 minutes.

Add the margarine and cook, stirring constantly, for several minutes until the mixture resembles a thick pudding.

Transfer the mixture to a heat-proof dish and let cool completely before placing in the refrigerator to chill. Chill lemon curd for 2 hours in the refrigerator before using.

Crema de limón vegana

Ingredientes:

1 ¼ tazón (300 mL) de zumo de limón
1 ¼ tazón (250g) de azúcar
2 cucharadas de ralladura de limón (opcional) – no sé el peso de ralladura
¼ cucharadita (2g) de sal
2 cucharadas (30 mL) de leche de coco
3 cucharadas (35g) de maicena disuelta en 3 cucharadas (30 mL) agua fría
2 cucharadas (30g) de margarina


Instrucciones:

En una sartén pequeña, calienta a fuego medio el zumo de limón, el azúcar, la ralladura (si la quieres), y la sal.

Cuando el azúcar se ha disuelto, añade la lecha de coco y la mezcla de maicena y agua.
 
El zumo y azúcar sin la maicena
Mezcla todo bien durante ~8 minutos (si, constantemente) hasta que la mezcla empieza a espesarse y unas burbujas aparecen.

Añade la margarina y cocina todo durante unos minutos, hasta que la mezcla tiene la consistencia de un pudín.

Pon la crema en un tazón y déjala enfriar a temperatura ambiente antes de ponerla en la nevera. Enfríala en la nevera durante 2 horas antes de servirla.

Soft Glazed Sugar Cookies / Galletas blandas con glaseado

I’ve been craving sugar cookies lately, so I wanted to try this recipe that I found. The cookies I made ultimately came out very different from hers (and the ones that I wanted…), but ended up being very similar in texture to a recipe that my family loves and calls “dope cookies” because they’re so addictive. I took these cookies into my internship, and people devoured them very quickly and are requesting even more!

If you want cookies more like those in the source recipe, I think you would have to add much more flour than I used; the person who made the recipe must have a very heavy hand when measuring out the flour, because my dough was much too wet to roll out.

Últimamente he tenido ganas de galletas de azúcar, así que quería probar esta receta que encontré. Las galletas (de la receta) que yo hice eran diferentes de las de ellas (y las que quería…), pero eran muy parecidos a las galletas de una receta familiar. Llevé las galletas a mi trabajo, donde mis colegas se las comió, ¡y tres días después todavía me están pidiendo más!

Si quieres galletas como las galletas en la receta original, creo que tendrías que usar mucho más harina que yo usé. La persona que escribió la receta debe de haber apisonado la harina en las tazas, porque mi masa era demasiado mojada, y no pude estirarla.

First, there are a few adjustments I made to remove the eggs and dairy (do these before anything else!):
1) Use margarine instead of butter. Easy.
3) Use this recipe to make the coconut sour cream (use a 15 oz. can of full fat coconut milk—approx. 440 mL).
2) Use this recipe to replace the eggs (make only this amount to replace two eggs):
1 Tbsp (12g) tapioca or corn starch
1 Tbsp (10g) potato starch
1/4 tsp (1g) baking powder
Add a scant 1/2 cup (~110 mL) water and 2 tsp (10 mL) oil. Whisk until thoroughly combined and somewhat frothy.

 
Let’s get down to business!


Fluffy Sugar Cookies
(This makes A TON of cookies)

Ingredients:
1 cup (230g) margarine (or butter)
2 cups (400g) white sugar
2 “eggs” (or actual eggs)
1 Tbsp (15 mL) vanilla extract
1 cup (240 mL) coconut sour cream (or regular sour cream)
1 tsp (8g) salt
2 tsp (16g) baking soda
27 oz. (765g) all-purpose flour ---- I prefer to measure by weight because it is much more accurate and consistent than using cups. My way of scooping 5 ½ cups of flour was obviously very different from the way that the recipe’s author scoops flour.

Directions:
In mixer, cream margarine and sugar, and then add “eggs” and vanilla. Add coconut sour cream. Combine salt, soda, and flour, and add to mixture. 

It might look weird after all the wet ingredients are mixed, but that's okay! / Puede parecer un poco raro cuando todos los ingredientes mojado son mezclados, ¡pero está bien!

Scoop out onto a baking sheet and bake at 375ºF (190ºC) for 7-9 minutes (7 for smaller cookies, up to 9 for very large cookies). They will be very pale when they are finished. Don’t let them brown, or they won’t be soft and fluffy.

Optional: Add lemon or orange zest to the wet ingredients.

To finish these, I let them cool completely and then glazed them. I never measure the ingredients for glaze, so you might want to Google a glaze recipe if you like exact numbers. For the lemon glaze, I just tossed together some lemon juice, a tiny bit of lemon extract, powdered (confectioner’s) sugar, and some lemon zest. For the orange glaze, I used orange juice, orange zest (lots, as you can see in the picture below), and powdered sugar.

Primero, cambié algunas instrucciones para remover los huevos y productos lácteos (¡haz estos antes de todo!):
            1) Usé margarina en vez mantequilla.
            2) Usé esta receta para hacer la crema de coco agria:
                        - 1 lata (15 oz. : aprox. 440 mL) leche de coco con toda su grasa (dejada en el                         refrigerador durante 8 a 12 horas)
                        - 1 cucharada (15 mL) zumo de limón o vinagre de sidra de manzana
                        - 1/8 a ¼ (1g a 2g) cucharadita sal
                       
                        Pon la lata de leche de coco en la nevera durante 8 horas (por lo menos). La
                        crema se va a separar de la leche. Abre la lata y pon la crema en un tazón. 
                        Añade el zumo y la sal. Bate la mezcla bien.
 

            3) Usé esta receta para reemplazar los huevos (haz sólo esta cantidad para reemplazar dos             huevos):
                        - 1 cucharada (12g) maicena
                        - 1 cucharada (10g) almidón de patata
                        - ¼ (1g) cucharadita levadura en polvo
                        - ½ taza (escasa) agua (~110 mL)
                        - 2 cucharaditas (10 mL) aceite

                        Bate la mezcla hasta que es un poco espumosa.
           

¡Y ahora estamos listos!

Galletas blandas de azúcar
(Esta receta hace MUCHAS galletas)

Ingredientes:
1 taza (230g) margarina (o mantequilla)
2 tazas (400g) azúcar blanca
2 “huevos” (arriba. O puedes usar huevos verdaderos)
1 cucharada (15 mL) extracto de vainilla
1 taza (240 mL) crema de coco agria (o crema agria verdadera)
1 cucharadita (8g) sal
2 cucharaditas (16) bicarbonato de sosa
27 onzas (765g) harina

Instrucciones:
Bate la margarina y azúcar, y luego añade los “huevos” y la vainilla. Añade la crema de coco agria.

Mezcla la harina, la sal, y el bicarbonato de sosa, y añade a la mezcla mojada. No la mezcles demasiado o las galletas van a ser correosas.

Hornea las galletas a 375ºF (190ºC) durante 7-9 minutos (7 para galletas pequeñas, hasta 9 para galletas grandes). Cuando han terminado, aún van a ser muy pálidas. No permita que se pongan marrón, o no van a ser blandas.

Opcional: Añade ralladura de limón o naranja a los ingredientes mojados.

Para completar las galletas, las glaseé. Nunca mido los ingredientes, así que te gustaría tener los números exactos, recomiendo que los busques en Google. Para el glaseado de limón, mezclé zumo de limón, un poquitito de extracto de limón, azúcar en polvo, y ralladura de limón. Para el glaseado de naranja, usé zumo de naranja, ralladura de naranja (un montón, como puedes ver en la foto), y azúcar en polvo.
