In one of my first posts I promised cake, and here it is! Well, cupcakes. This is originally from a recipe for chocolate “wacky cake” or “depression cake,” so-called because of its origins during the Great Depression. Milk and eggs were hard to come by, so recipes were developed that didn’t need these ingredients. Whether or not the story is true, this recipe is extremely fast and easy. I’ve made modifications to the original recipe to make spice cake, orange cake (like in this post), lemon-raspberry cake, and good ol’ vanilla cake. The vinegar scares people, but there absolutely no taste to the finished cake. It’s just there to react with the baking soda (remember your third-grade science class?) and make the cake rise.

pasteles. ¡Aquí
está! Bueno, son magdalenas. Esta receta es una adaptación de “wacky
cake” (“pastel absurdo”) o “depression cake” (pastel de la depresión) por su
origen en la Gran Depresión. La leche y los hueves eran difíciles de conseguir,
así que recetas que no necesitaban esos ingredientes fueron inventadas. Sin
importar si esa historia sea verdad, esta receta es muy rápida y fácil de
hacer. He modificado la receta para hacer pasteles de especias, de naranja (como
en esta entrada), de limón y frambuesa, and y de la clásica vainilla. El
vinagre le da miedo a la gente, pero el pastel no sabe a vinagre en absoluto. Sólo
está para reaccionar con el bicarbonato de sosa y ayuda a que el pastel se
eleve.

Orange cake
Makes 12 cupcakes
Dry
ingredients:
1 ½ cup (200g)
all-purpose flour
¾ cup (150g) sugar
½ tsp (3g) salt
1 tsp (4g) baking soda
¼ cup (30g) corn
starch
Wet ingredients:
¼ cup and 2 Tbs (90 mL)
vegetable oil (=
3/8 cup total)
1 Tbs distilled white
vinegar
1 tsp vanilla extract
zest from 1 orange
(opt)
½ cup orange juice
½ cup cold water
Mix
dry ingredients together.
Mix
wet ingredients well and incorporate with dry ingredients until they are just
wet. Do not over mix.
Line a cupcake pan and
fill each cup almost until the top (¼ cup/60 mL of batter in each). Bake
cupcakes at 350°F (175°C) until a toothpick inserted in the middle comes out
clean, about 25-28 minutes.

Pastel de naranja
Para hacer 12
magdalenas
Ingredientes secos:
1
½ tazas (200g) de harina
¾
taza (150g) de azúcar
¼
taza (30g) de maicena
½
(3g) cucharadita de sal
1
(4g) cucharadita de bicarbonato de sodio
Ingredientes
mojados:
¼
taza más 2 cucharadas (90 mL) de aceite vegetal o de canola (=3/8 de una taza
en total)
1
cucharada (15 mL) de vinagre blanco
1
cucharadita (15 mL) de extracto de vainilla
Ralladura
de una naranja (opcional)
½
taza (120 mL) de zumo de naranja
½
taza (120 mL) de agua fría
Mezcla los ingredientes
secos.
En
un cuenco distinto, mezcla los ingredientes mojados.
Añade
los ingredientes mojados a ingredientes secos y mezcla suavemente. No batas la
mezcla demasiado.
Prepara un molde de magdalenas y llena cada (¿bol? ¿copa?
¿cómo se dice?) con ¼ taza (60 mL) de la masa. Hornea las magdalenas a 350°F
(175°C) hasta que un palillo metido en una magdalena salga limpio,
25-28 minutos.
