I
think I’d choose good, fresh bread over cake any day. Dipped in high-quality
extra virgin olive oil with a sprinkle of salt and pepper, it has a way of
making everything a little better while you’re enjoying it. Making bread has
always been a bit daunting for me, which is why I was excited to learn about
the book Artisan Bread in Five Minutes a Day, a book filled with
no-knead bread recipes. The olive oil dough has become my go-to and is great
for adding herbs to: basil, rosemary, whatever you fancy.

pastel. Con aceite de oliva de buena calidad, tiene una manera de mejorar el día.
Hacer el pan me ha parecido sobrecogedor…hasta que leí el libro Artisan
Bread in Five Minutes a Day (Pan artesano en cinco minutos al día). Tiene
recetas fáciles, y no hay que amasar las masas. Mi receta favorita es el pan de
aceite de oliva, una masa a la que puedes añadir hierbas y especias como albahaca,
romero, etc.

Olive Oil Bread
Makes
four 1-pound loaves or 22 rolls
This
recipe is easily halved or doubled
Ingredients:
2
¾ cups (650 mL) lukewarm water
1
½ Tbs (13g) granulated yeast (2 packets)
4
tsp (23g) salt
1
Tbs (15g) sugar
¼
cup (60 mL) extra virgin olive oil
6
½ cups (850g) all-purpose flour – in a large bowl
Directions:
Mix
the yeast, salt, sugar, olive oil, and water.
If
you have herbs or spices you want to add to the bread, mix them into the flour
now.
Mix
the liquid ingredients into the flour. I mix with a spatula at first and then a
dough hook for the last part. You may need to use wet hands to mix in the last
of the flour if you’re not using a machine. The dough should be rather wet.
Cover
the bowl with a kitchen towel and allow the dough to rise in a room temperature
area for two hours.
For
rolls:
Place
a broiler tray into your oven and preheat it to 420°F (215°C). Grease two
muffin pans with olive oil. Pull off chunks of dough equal to about ¼ cup (60
mL). For a full recipe, there should be enough dough for 22 rolls.
Lightly
coat each roll with olive oil and allow them to rise for 20 minutes.
Right
before baking, pour 1 cup (240 mL) of water into the broiler tray, then bake the
rolls for 20 minutes or until lightly browned on top.
For
free-form loaves:
Place
a broiler tray into your oven and preheat it to 425F (220°C). Grease a baking
sheet with olive oil. Cut off a 1-pound (grapefruit-size) piece of dough.
Without overworking the dough, gently and quickly shape it. Put the dough on
the greased sheet and lightly coat with olive oil. Repeat for another loaf,
then allow to rise for 20 minutes.
Right
before baking, pour 1 cup (240 mL) of water into the broiler tray. Bake the
bread for 25 minutes or until golden brown.
Tip
1: The dough is easier to handle if your hands are wet.
Tip
2: If you make the full recipe of dough but do not bake it all, it can be
refrigerated for over a week.

Pan de aceite de oliva
Para hacer cuatro hogazas de 4 libras (450g) o 22
panecillos
Se puede reducir a la mitad o doblar fácilmente la recta
Ingredientes mojados:
2 ¾ tazas (650 mL) de agua tibia
1 ½ cucharadas (13g) de levadura (2 paquetes)
4 cucharaditas (23g) de sal
1 cucharada (15g) de azúcar
¼ taza (60 mL) de aceite de oliva extra virgen
Ingredientes secos:
6 ½ tazas (850g) harina – en un cuenco grande
Especias o hierbas (opcional)
Instrucciones:
Mezcla la levadura, la sal, el azúcar, el aceite, y el agua.
Si quieres añadir especias o hierbas, añádelas a la
harina ahora.
Mezcla los ingredientes mojados con los ingredientes
secos. Yo los mezclo con una espátula al principio y después con un
gancho de masa (en la batidora). Si no usas una máquina, mójate las manos e
úsalas para incorporar toda la harina con los ingredientes mojados. La masa va
a estar bastante húmeda.
Cubre el cuenco con un paño de cocina y espera a que la
masa crezca durante dos horas.
Para hacer panecillos:
Pon una bandeja para asar en el horno y precaliéntalo a 420°F (215°C). Engrasa con
aceite de oliva dos moldes para panecillos. Separa 22 bolas de masa (cada bola de ¼
taza / 60 mL).
Engrasa ligeramente cada bola con aceite de oliva y espera
a que crezcan (¡otra vez!) durante 20 minutos.
Justo antes de hornear los panecillos, pon 1 taza (240 mL)
de agua en la bandeja para asar. Hornéalos durante 20 minutos.
Para
hogazas:
Pon una bandeja para asar en el horno y precaliéntalo a 425°F (220°C). Engrasa con aceite de oliva una bandeja de horno. Coge
un trozo de masa de 1 libra (450g, aproximadamente el tamaño de un pomelo). Sin
manipular la masa demasiado, ponla en la bandeja y engrásala ligeramente.
Repite el proceso para otra hogaza, y espera a que crezca la masa durante 20
minutos.
Justo antes de hornear el pan, pon 1 taza (240 mL) de
agua en la bandeja para asar. Hornéalos durante 25 minutos.
Consejo 1: La masa es bastante pegajosa. Mójate las manos
y será más fácil manipularla.
Consejo 2: Si haces la receta completa pero no horneas
toda la masa, puedes guardar la masa extra en la nevera durante más de una
semana.
