I love basil, and this year basil loves me. We have maybe
a dozen basil plants in the garden, and they’re taking over and choking out
everything else! My favorite kind of problem. Fortunately, I know just the
thing to deal with mountains of basil: pesto. Unfortunately, pesto takes a lot
of basil…if you don’t have a basil-jungle in your backyard or the ability to
buy basil in bulk, this recipe might be tough. I know that grocery store basil
is out of my budget normally, and buying enough for this recipe is unrealistic.
If you’re determined, though, you could perhaps halve the recipe and/or add
more spinach to stretch it. Another small change: pine nuts are EXPENSIVE, so I
subbed pecans, which we already had in the kitchen. I’ve also seen pistachios
and walnuts used; basically any fatty, slightly soft nut would do, I think.

LA ALBAHACA. Y este año he sido bendita por una verdadera SELVA de albahaca,
tanto que las otras plantas sufren. Afortunadamente, sé exactamente la receta para
usar un mogollón de albahaca: pesto. Desafortunadamente, pesto usa un mogollón
de albahaca…si no tienes una selva de albahaca o la oportunidad de comprar
albahaca a granel, esta receta puede ser difícil. La albahaca del supermercado normalmente
cuesta demasiado, y comprar suficiente para esta receta quizás no sea realista.
Pero si estás determinad@, puedes reducir a la mitad la receta y/o añadir más
brotes de espinaca. Otra cambia: piñones son CAROS, así que utilicé pacanas, la
cual ya teníamos en casa. También he visto pestos con nueces y pistachos; me
parece que se puede usar cualquier fruto seco similar.

Ingredients:
3 cups (~320g) blanched basil – this is much more than 3
cups before it’s been blanched. Perhaps 5 or 6 cups fresh?
½ cup (30g) packed fresh baby spinach – this also helps
keep the pesto bright green
½ cup (50g) pecans
4 cloves garlic
1/3 cup (80 mL) olive oil
2 Tbs (30 mL) water
¼ cup (25g) grated Parmesan cheese or 3 Tbs (10g)
nutritional yeast (opt. but highly recommended)
½
tsp (4g) salt
Pinch
of black pepper
Directions:
To blanch the basil: bring a small pot of water to a
boil. In small batches, plunge the basil into the water for about 10 seconds,
then remove and let drain. This helps prevent the pesto from turning brown.
Stick all the ingredients in a blender or food processor and
let ‘er rip! It could take several minutes for the basil and spinach to be chopped
finely enough for a smooth pesto.

taza (25g) de queso parmesano rallado
½ cucharadita (4g) de sal
Pellizco de pimiento negra molida
Instrucciones:
Para
escaldar la albahaca: en una olla pequeña pon agua a hervir. Coloca un poco de la
albahaca en la olla durante unos diez segundos, y luego remuévela y déjala
colar. Esto ayuda a prevenir que el pesto se ponga marrón.
Pon
todos los ingredientes en una batidora o un procesador de alimentos, y déjalo mezclar
durante unos minutos. ¡Et voilà! ¡Pesto!
