tortilla española? A mí me gusta mucho, pero claro que no es vegana. Anteayer
encontré esta receta, una “tortilla”
vegana. Me interesó mucho, y decidí probarla. Si prefieres una tortilla
verdadera, esta receta o esta receta (en inglés) me parecen buenas. Si nunca
has hecho una tortilla, recomiendo que mires este video corto antes de hacer la tortilla vegana o tradicional.
Para hacer la
tortilla un poco más rápidamente, generalmente hiervo la patata durante unos
minutos y después freírla un poco. Si prefieres, también puedes cocinar la
patata en aceite de oliva. Dura más tiempo, pero creo que hay más sabor.

Vegan Spanish “omelette”
Ingredients:
1 medium-large potato
(~10 oz/280g) – I used a red potato
Water for boiling
potato
2 Tbs (30 mL) olive
oil
½ small onion,
chopped (~1/3 cup, 50g)
1 cup (240 mL) water
1 cup* (95g) chickpea flour (make or buy) – you can use
all-purpose flour if you want, but the chickpea flour has a flavor that works
really well in this recipe.
1 or 2 (10-20 mL) tsp
salt
Directions:
The original recipe
says that “the method of making a vegan tortilla is very similar to the [non-vegan
tortilla].” That doesn’t help much if you’ve never made a Spanish tortilla. A
couple of tips:
-after
the tortilla has been cooking for five minutes or so, use a flexible spatula to
gently lift a side of the tortilla away from the pan and tip the pan so that
the liquid sitting in the middle of the pan can sneak under the tortilla. This
is how you avoid a burnt outside and a soggy middle.
-to
flip: a video might be more useful.
She talks for a bit before getting there, but she does get there.
Now for the actual directions!
Peel and cut the potato into cubes or thin slices (which is what I prefer),
then boil in a medium saucepan (9-10 inches across) until just tender. Remove
from the pan and set aside. With the olive oil and salt, sauté the chopped
onions in the same pan until tender. Reduce heat to medium-low, add the potatoes,
stir, and let cook for several minutes.
Meanwhile, thoroughly
mix one cup of chickpea flour, one cup of water, and a pinch of salt. Pour this
mixture into the saucepan and stir quickly to coat the potatoes. Let cook for a
while** (20 minutes?), then flip. Remember the tips I mentioned earlier!
Cook for a while
longer** (15 minutes?), and then it’s done!
Results: Well, it’s
certainly not a true tortilla, but it’s not bad at all.
*I think that the batter
may have been too thick; the tortilla took forever to cook (and was actually a
bit underdone for me). Perhaps 2/3 cup (70g) of flour to 1 cup (240 mL) of
water would work better.
**I got distracted
and didn’t time this…if I make this again, I will update the recipe to be more
specific about the cooking times.

Tortilla española
vegana
Ingredientes:
1 patata (~10 oz/280g)
Agua para
hervir la patata
2 cucharadas (30
mL) de aceite de oliva
½ una cebolla
pequeña (½ taza, 75g), cortada en dados
1 taza (240 mL) de agua
1 taza* (95g) de harina de garbanzos (hacer o comprar)
– puedes usar harina de trigo, pero la harina de garbanzos tiene un sabor muy
apto para este plato.
1 o 2 cucharaditas
(5g o 10g) de sal
Instrucciones:
Pela y corta la patata en cubos o rebanadas delgadas (lo
que prefiero yo), y después hiérvela en una sartén mediana (diámetro de ~9 pulgadas/23
centímetros) hasta que empieza a ser tierna. Remuévela de la sartén y ponla a un
lado. Con el aceite y el sal, sofríe la cebolla en la sartén a fuego medio hasta
que es tierna. Baja el fuego un poco (a medio-lento), añade la patata, mezcla
todo, y deja la mezcla cocinar durante unos minutos.

Mientras, mezcla el agua y la harina. Añade esta mezcla
a la sartén y revuelve todo rápidamente. Déjala cocinar durante un tiempo** (¿20
minutos?), y voltéala.
Déjala cocinar un poco más** (¿15 minutos?) ¡y ya está!
Espero que la disfrutes.
Los resultados: Bueno, cierto que no es una tortilla verdadera,
pero no está mal.
*Creo que la masa era demasiado espesa; tomó mucho tiempo
para cocinar. Quizás 2/3 taza (70g) harina y 1 taza (240 mL) agua sería mejor.
**Desafortunadamente, no presté atención a la duración de
la cocina. Si hago esta receta en el futuro, cambiaré esta entrada para ser más
específica sobre la duración.
